A way for captions to appear

Is there a way for the caption of an image to be displayed on the slide?

    Sure, enable globalCaption option, http://dimsemenov.com/plugins/royal-slider/documentation/#global-ca... Or use templates like http://dimsemenov.com/plugins/royal-slider/content-slider/ that have text directly in the content of a slide.

    Are you having some specific issue? Please link to the page that you're working on.

    I have added a caption to all images and have added globalCaption:true,
    to my javascript initialisation but nothing is happening.

    Most likely your RoyalSlider JS build doesn't contain global caption module, either download minified version from build tool or include the module js file manually.
